Farm-to-table takes on a whole new meaning at Maizal, a restaurant in Liberty Village where the owners also believe in table-to-farm.
Restaurant staff grow and cultivate their own maize (corn) and other ingredients on their local farm, then bring the haul to King Street West and Jefferson Avenue.
There, it becomes hand-made tortillas, which are offered alongside traditional ingredients.
Once meals are finished at the restaurant, the compost from the restaurant is taken back to the farm for the soil and livestock.
