Climate change forcing Ontario icewine makers to adapt

Ontario icewine producers say the threat of climate change has many grape growers looking for new strategies.
The province is among the world’s few wine-growing regions where temperatures can drop to the minus-8 C required for icewine.
Laura Sabourin — who runs an organic vineyard outside St. Catharines — says producers must find strategies to protect themselves from significant temperature changes.
She says growers could bring in new varieties of grape that are designed for even tougher winters, adopt new harvesting and preservation techniques and diversify into other winter crops.
