NIAGARA, Ont. – While most would agree that Italy is the wine mecca of the world, the Niagara Region is giving it a run for its money.
A Niagara winemaker is adapting a popular Italian winemaking technique, and will be using it right here in Ontario.
While you may not be familiar with the technique known as the “appassimento,” you will likely know the wine where it is most frequently used – Italy’s powerful Amarones.
Niagara’s Reif Estate Winery is applying the appassimento technique to one of its own wines, creating a taste that’s a little bolder, richer and packed with flavour.
The technique involves adding dried grapes to the mixture, which Reif Estate winemaker Robert Di Domenico told 680News that it is useful in our climate, especially during years where the weather does not cooperate.
The new wine will be called “The Magician.” It’s a blend of Pinot Noir and Syrah, and the Reif Estate Winery is hoping they’ll have it at the LCBO by this summer.
