How to make a Greek salad with steak

Nouveau Greek Salad
Makes 4 servings.
8 oz of medium rare sliced steak
1 medium head romaine lettuce, cut into bite-sized pieces
1 cup coloured cherry tomatoes, sliced in half
1⁄3 cup diced sun-dried tomatoes
1 cup sliced baby cucumber, cut in half
1⁄3 cup halved black olives
1⁄3 cup diced red onion
½ cup diced reduced-fat feta cheese
Feta cheese dressing
1⁄3 cup crumbled reduced-fat feta cheese
½ cup softened reduced-fat cream cheese
3 Tbsp reduced-fat sour cream
½ tsp finely chopped garlic
1 Tbsp lemon juice
3 Tbsp water
½ tsp dried basil
1. Grill the steak just until cooked to your preference. Cool for 10 minutes, then slice thinly.
2. Place the lettuce on a large serving platter.
3. Scatter the tomatoes, sun-dried tomatoes, cucumber, olives, onion, steak slices and feta cheese decoratively overtop.
4. To make the dressing: in a small food processor, add the feta and cream cheeses, sour cream, garlic, lemon juice, water and basil. Purée until smooth, adding more water
if too thick. Pour overtop of the salad.
Preparation time 20 minutes

Rose’s tip
Another trend today is to grill whole romaine lettuces for a minute on both sides. You could do this for this salad and serve the other ingredients scattered over the entire grilled romaine lettuce. Use two leaves per serving.
! Health tip
A head of romaine has more nutrients than iceberg lettuce. One head of romaine has 8 grams of protein, 13 grams of fibre and 200 mg of calcium whereas iceberg has only 5 grams of protein, 7 grams of fibre and 97 mg of calcium.
